PREPARATION
Boil three parts of water for each part of millet and simmer for 20 mins until tender. Add more water and stir frequently during the cooking process to make a creamier millet.
COOKING TIPS
Lightly toast millet before cooking to enhance the earthy, nutty flavour. Toss in salads or add to omelettes. Boil in milk instead of water and add some maple syrup and fruit for a tasty porridge.
COOKING IDEAS
Pop millet like popcorn, place a small amount in a dry skillet and shake the pan until you see a slight change in the colour and shape. Popped millet is smaller than popcorn and can be used also in place of breadcrumb coatings.
